Quick Quiche for Your Family
We know that real men eat quiche, but did you know that real moms make quiche for dinner? Quiche is one of those foods that has an air of stuffiness about it, tending to be something that's served at brunch or at a fancy bed-and-breakfast. But quiche can be a busy mom's best friend. It is full of protein and vegetables, is a breeze to make and adds a bit of weekend luxury to a hurried weekday evening.
Quiche can be in the oven with less than 10 minutes of hands-on time using a frozen pie crust. Combine the ingredients in the blender, add the vegetables and pour into the pie plate. Pop your quiche into the oven and let it bake. As an easy side dish, toss a pound or two of new potatoes in olive oil and oregano and roast in the oven alongside your quiche. Add a green or fruit salad and you have dinner on the table.
Quiche Master Recipe
This is the basic recipe for quiche with baking instructions. Use one of the variations listed below or if you have an interesting leftover lurking around in your fridge add it in.
Serves 4-6
1 9-inch frozen pie crust
6 eggs, preferably at room temperature
2 cups cheddar cheese, grated
2 cups milk, gently heated
½ teaspoon salt
½ teaspoon black pepper
Preheat the oven to 425 degrees and bake the empty pie crust for 10-12 minutes. Remove the pie crust from the oven at let cool while you prepare the filling.
In a blender, mix the eggs, milk, salt and pepper.
Add the cheddar cheese to the pie plate and pour the egg mixture over the top.
Bake for 30-40 minutes or until the eggs are nearly firm and golden brown.
You will need 2 cups of additions to replace the cheddar cheese ' this could be 1 cup of cheese and 1 cup of a vegetable or grain, or 2 cups of something interesting. If you are using vegetables or grains, be sure to cook and drain them. The baking directions are the same. Some great quiche additions:
- Black beans, served with salsa spooned over the top
- Cooked asparagus, cut in to 1-inch pieces
- Goat cheese and pesto
- Steamed broccoli
- Hash Browns
- A can of diced green chilis
- Apples and sausage
- Carmelized onions with quinoa or bulgur wheat
- Pepper jack cheese with salsa mixed in
- Spinach and feta cheese
- Marinated artichoke hearts with ricotta
- Sun-dried tomatoes and parmesan cheese
